I am all about Mexican food!! That means Cinco de Mayo always shows up as a celebration in my meal plan. Cinco de Mayo, which means May 5 in Spanish, is often a misunderstood Mexican holiday… Cinco de Mayo is not a celebration of Mexican independence – which is celebrated Sept.16. Cinco de Mayo commemorates the Mexican army’s unexpected victory over the French forces of Napoleon III on May 5, 1862, at the Battle of Puebla.
Honestly, I don’t need a special holiday to celebrate with Mexican food! How about you?
Guac it up on Cinco de Mayo!
When I make guacamole at home, I take the easiest route possible. Plus when you make it yourself, you can control the ingredients and keep it clean! The best bet is to skip the seasoning packet and DIY! Grab a container of fresh salsa (not the jar!), some garlic, a lime, avocados, and salt. Slice and mash your avocado with a fork, add some garlic, a tablespoon or two of fresh salsa, juice of half a lime and salt to taste. That’s all there is to it! Remember, avocados aren’t just for guac!
Bell Pepper Nachos for a Clean Cinco de Mayo
Anyone that knows me, knows I love nachos! Of course, I never loved the feelings I’d have after eating a platter of chips with liquid cheese and gobs of sour cream!
Enter the bell pepper nacho option! Roast the bell pepper slices just a bit in the oven with a spritz of olive oil, top with your taco meat, some cheese and then use Greek yogurt as a sour cream replacement. Don’t forget your guac! There you go! If you’re family isn’t down with this version, go ahead and have a nacho bar and they can DIY it!
Clean Cinco de Mayo Cocktail
The Paloma is a tequila based, super refreshing cocktail. How about this fact? The Paloma, not the Margarita is the most beloved drink in Mexico! Here’s a clean cocktail recipe that you can enjoy without feeling guilty about a ton of wasted calories.
Ingredients & Steps
- 1⁄2 tsp. raw honey* + 1 tsp. hot water
- Ice
- 1 fl. oz tequila
- 1 fl. oz. unsweetened grapefruit juice or Fresca!
- Sparkling water (skip if you use Fresca)
- 1 lime wedge
- Combine honey and hot water in a small bowl; stir until honey is fully dissolved. Set aside.
- Fill a highball glass three-quarters full with ice.
- Add honey mixture, tequila, and grapefruit juice; mix well.
- Top with sparkling water to almost fill glass; mix well.
- Garnish with lime wedge and enjoy!
