Instant Pot Pork for Good Luck in the New Year

Ring in the new year with delicious pork in the Instant Pot!

This new year, I decided to have a get together on New Year’s Day. I’m just getting too old to hang out until midnight on New Year’s Eve and quite honestly, I find the ball drop a bit anti-climatic. I’d rather get a great night’s sleep and wake up refreshed to wish people a happy new year!

I decided to make Instant Pot shredded pork, since pork and sauerkraut is believed to bring good luck and good fortune in the months ahead – it’s perfect for a New Year’s meal. I’m not usually a sauerkraut fan, but other people like it and since it’s a veggie, I thought I might give it a try. Could be just the smell that I’ve been against in the past, because I really don’t know what it tastes like! Part superstition and part tradition, eating pork and sauerkraut on New Year’s Day is like a Pennsylvania Dutch insurance policy for the new year. Eating it is believed to bring good luck and good fortune in the months ahead.

Food has emotional connections for me

I grew up eating porkette made in a slow cooker – and I loved it! My grandmother’s recipe has great flavor and long lasting emotional satisfaction. My husband went to college in Philadelphia and while he is a cheesesteak connoisseur, he also loves a great roast pork sandwich. The problem for me is that making pork in the slow cooker takes a long time and by the time I think about making it, it was usually too late.

When I got the , I realized I could have the pork from my childhood much more often because the cooking time is so much faster.

There are only a few ingredients and once you master the instant pot release techniques you’re going to be making way more meals with this must have device. How about lasagna soup for instance?! 

Depending on the size of your instant pot, pick the roast that fits. I have the and I go for a 4-5 bone in roast. I save the bones for making my own bone broth later – also in the instant pot!

Ingredients

  • 4-6 pound bone in pork butt or shoulder
  • 2-3 Tbsp Rosemary
  • 4-6 Garlic cloves
  • Sharp Provolone Cheese
  • Your favorite rolls

Steps

  1. Cut the pork roast into a few pieces and sprinkle with salt and pepper.
  2. Add some olive oil to the Instant Pot (or use a pan on the stove).
  3. Brown the edges of the pork pieces in the Instant Pot using the Saute feature or on the stovetop.
  4. Once the pieces are browned, add 3-4 cups of low sodium bone or chicken broth to the Instant Pot liner.
  5. Add the rosemary and garlic to the pot.
  6. Place the IP lid on the pot, lock in place and set the sealing valve to sealed.
  7. Set the pot to high pressure for 90-100 minutes using the manual setting.
  8. Once the time has elapsed you can wait for the natural release – about 20 minutes and then remove the port to a bowl to shred with a couple of large forks.
  9. Add the pork back to the liquid and either serve immediately or let cool in the refrigerator overnight.
  10. Remove the top layer of fat in the morning and reheat with your favorite cheese on a fresh or toasted roll!
