Instant Pot Apple Shredded Chicken

Dinner made easy with the Instant Pot

Chicken! It seems like we eat a lot of it, but my family just isn’t that into it unless it’s breaded or fried.

Ingredients

    1.5 lbs boneless skinless chicken breasts or thighs
    1 medium red onion sliced
    1 granny smith apple peeled and sliced
    2 teaspoons minced garlic
    1 teaspoon kosher salt
    1 cup apple juice or cider (no added sugar)

Steps

  1. Place onion, apple slices, and garlic in the bottom of the Instant Pot.
  2. Place chicken breasts/thighs on top of onions and apples. Sprinkle with salt and pour apple juice/cider over chicken.
  3. Seal lid and cook on Manual setting for 15 minutes. Allow natural release (about 10 minutes) when cycle is complete.

You can shred the chicken right in the pot or transfer to a deep bowl. It’s so tender that you can shred it with two forks. To reduce the liquid, you can turn on the sauté function and let the mixture simmer for several minutes.
