Replace your mashed potatoes with cauliflower!
Food swaps are kind of important when we switch to clean eating. White potatoes get cast aside for sweet potatoes and more veggies!
It’s not easy – I have had my share of mashed potatoes that’s for sure! Believe me, I was skeptical about the idea of cauliflower as a replacement. I had tried it once and it was a pretty big fail.
This totally works! Obviously, it’s not mashed potatoes- but it’s so good as it’s own thing! Try it! I used real bacon 😉
Ingredients
- 3 cups cauliflower
- 4 ounces fage plain greek yogurt
- 1 cup 2% grated sharp cheddar cheese
- 2 slices cooked (turkey) bacon
- 1 tablespoon dried chives
- 2 tablespoons butter
- 1/4 teaspoon
- ¼ teaspoon salt
- ½ teaspoon pepper
Steps
- Cook the bacon in a skillet until crisp; set aside on a paper towel then crumble.
- Preheat the oven to 350°F
- Fill a large pot with water, bring to a boil and add cauliflower and garlic. Boil the cauliflower about 15-20 minutes until soft.
- Drain, and return to the pot.
- Add the yogurt, butter, salt and pepper to the cauliflower and purée with a hand blender or transfer to regular blender. I used my !
- Mix in the chives and transfer to 4 individual casseroles (3/4 cups each) or one casserole dish.
- Top with cheddar and crumbled bacon.
- Bake in the oven until the cheese melts, about 5 minutes and then top with remaining chives.
