Enjoy summer tomatoes!
I am always on the lookout for recipes for summer tomatoes. Tomatoes are one of my favorite veggies and while I do eat them all year round, nothing beats a juicy garden ripe tomato.
Add some pesto and mozzarella, warm it in a nice tortilla and then you have some super tasty goodness. Be careful you don’t eat it all yourself!!
I was worried that the quesadillas wouldn’t stay closed on the grill, but it was actually really easy!
TOTAL TIME: Prep/Total Time: 20 min.
Makes: 2 servings.
Ingredients
- 4 whole wheat tortillas (8 inches)
- 6 ounces fresh mozzarella cheese, sliced
- 2 medium tomatoes, sliced and patted dry
- Prepared or homemade pesto
- Freshly ground pepper to taste
Steps
- Layer one half of each tortilla with cheese and tomatoes; drizzle with pesto, add pepper to taste. Fold tortillas to close.
- Grill, covered, over medium-high heat until lightly browned and cheese is melted, 2-3 minutes per side.
- Section and serve!
