Greek Quinoa & Avocado Salad
I’ve said it before and I’ll say it again – everything’s better with FETA and this greek quinoa & avocado salad didn’t disappoint! I saw this recipe and decided I had to try it pretty much right away. I topped mine with chicken (leftovers 😉 but it would be good plain too.
You’ll see that I used my Pampered Chef slicer for the avocado, spinach, grape tomatoes and the olives too! This recipe serves four – I broke it down to make a single serving.
Steps:
- In a 1-1/2-quart saucepan cook the quinoa according to package directions. You know it’s done when the liquid is absorbed. It takes about 15 minutes or so.
- Transfer quinoa to a medium bowl. Add tomato, spinach, olives and onion; stir to combine.
- In a small bowl, whisk together lemon juice, oil, and salt. Add to quinoa mixture; toss to coat.
- Place spinach leaves on 4 salad plates. Arrange avocado slices on spinach leaves. Spoon quinoa mixture over avocado slices. Sprinkle with some of the feta.
Tips:
*Brush avocado slices with additional lemon juice to prevent browning*
