Getting dipping with this twist on salsa!
Salsa is one of my favorite dips for summer! I had this mix at a friend’s house awhile back and could not stop eating it! And, it’s pretty much guilt free! All fresh ingredients makes it a win-win. Good tasting and good for you!
Ingredients

- 1 can black beans
- 1 can pinto beans (or black eyed peas)
- 1 cup diced red pepper
- 1 cup diced green pepper
- ½ cup diced red onion
- 2 green onions chopped
- 1 cup corn
- 1¼ cup cherry tomatoes (cut in quarters)
- 1½ Tbsp lime juice
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- Sea salt to taste
- Optional: Diced jalapeno to spice things up!
Steps
- Combine all the ingredients in a bowl and mix well.
- Let the mixture marinate in the fridge for a bit – even overnight!
- Enjoy for up to a week!
