Fiesta Turkey!
This one is a huge hit at our house! Turkey taco meat is so easy to make and can be eaten quite a few different ways! I like to roll mine up in a whole wheat tortilla with a bit of cheese and so does my daughter. She even takes it to school for lunch in a thermos quite often. It can be used on nacho chips too! I make the tomato sauce from the Fixate cookbook, but didn’t have quite enough. Use no sugar added sauce to stay as “clean” as possible. This makes about 4 servings of 1 1/2 cups each.

Ingredients
- 1 tsp olive oil
- 1 medium onion, chopped
- 2 medium jalapeño peppers, seeded, finally chopped (watch for spicy fingers!)
- 2 cloves chopped garlic
- 1 pound ground 93% lean turkey breast
- 1 tsp chipotle chili powder
- 1 tsp dried Mexican oregano leaves
- A dash of sea salt
- 1 1/2 cups tomato sauce, no sugar added
- 3 tbsp all natural tomato paste, no salt added
Steps
- Heat oil in large skillet over medium heat.
- Add onions & jalapeños; cook, stirring frequently for 4-5 minutes or until onion is see-through
- Add the garlic; cook stirring frequently for about a minute
- Transfer the onion, jalapeño & garlic mixture to a bowl and set aside
- Add turkey to the skillet and cook over medium heat, stirring frequently to break up the turkey for about 8 to 10 minutes or until the meat is no longer pink
- Add your seasonings – chili powder, oregano, and salt
- Mix in the onion mixture, the tomato sauce and tomato paste. Stir to mix well
- Reduce heat to medium-low; gently boil – stir the mixture frequently for about 8 to 10 minutes or until most of the liquid evaporates.
