These Blue Apron meals are something else! I agreed to this one because it has beef (which Rich likes) and a good amount of vegetables. Plus, the Blue Apron bread is always good! I didn’t know what a tartine was or what au Pistou meant, but the directions are well done and easy to follow! I made sure to read up on the recipe and learned that a French tartines is an open-faced sandwiches, with any number of toppings. Total yum there! This tartine starts with slices of crusty, rustic bread. **I modified and used Ezekiel bread.**
Browned beef, creamy Fontina cheese and tangy capers were layered on top then. I made the pistou – which is a Provençal green sauce similar to pesto. Blue Apron states that the pistou “brightens up the rich tartines” and then there is a side of sautéed zucchini. I liked the zucchini preparation method and will have it that way again!
