Boy, do I love onion rings! But I don’t love the way I feel after I eat them. Baked pepper rings can be just as crunchy and delicious but a little easier on the waistline 😉
Dip them into a marinara sauce warmed in the microwave or other tasty cool mixture

Ingredients
- 3 bell peppers
- 1/4 cup oat flour for coating
- Two eggs
- 1 tsp Sea salt
- 1/2 Panko breadcrumbs
- Coconut oil cooking spray
- Marinara sauce for dipping
Preheat oven to 450°.
Slice peppers into half inch rings
Toss with flour to coat. I used a ziploc bag to shake mine.
Break eggs into a bowl and whisk to blend
Place your breadcrumbs and salt on a large plate
Spray the baking sheet with coconut oil cooking spray or use parchment paper
Dunk pepper rings one at a time in the eggs and then coat with breadcrumbs
Transfer pepper rings to the baking tray, spray the rings with cooking spray and bake for 15 to 18 minutes.
Flip one time in the middle of baking
While the rings are baking, warm your pasta sauce in the microwave – I added some red pepper flakes! Serve the pepper rings with pasta sauce or alternate dip on the side.
