A Twist for Tuna!

I can remember packing tuna sandwiches for lunch years ago and eating it because I figured it was better than some of the things I might normally choose. I did NOT eat it because I liked it! When I saw this recipe, I was skeptical but willing to give it a try. I had tried some 21 day fix tuna recipes, but had not found one I actually liked eating. This one is a keeper!

  

TUNA SALAD WITH ARTICHOKES AND OLIVES

2 SERVINGS – about 1½ cups each

  • 2 cans chunk light tuna (5oz), packed in water, drained
  • 1.5 cups artichoke hearts, packed in water, drained, chopped
  • 1/2 cup chopped red bell peppers
  • 20 medium black olives, chopped
  • 2 tsp. all-natural mayonnaise
  • 1 tsp. fresh lemon juice
  • 3/4 tsp. chopped fresh oregano (or ½ tsp. dried oregano)
  • 1/8 tsp. ground black pepper
  • 2 large Boston (or Bibb) lettuce leave
  • 2 whole wheat tortillas

Combine tuna, artichoke hearts, bell peppers,olives, mayonnaise, lemon juice, oregano, and pepper in a medium bowl; mix well.

Lay out a tortilla (warm if you desire).
Add a leaf of lettuce on the tortilla and top evenly with tuna salad.

This would work for two meals.  You can surely double the recipe, but I probably would plan to eat it within 2-4 days!
