It was great to have an extra day at home to spend time with family and get my meal prep on! I had been to the store earlier in the weekend and gathered the items and ingredients I needed to set myself up for meal success this week. I decided to label my containers to make it easier for my husband to make healthy choices also.
This week I prepared turkey taco meat from the Fixate cookbook. This is one of my favorite things to eat. I put some in a whole wheat tortilla with a little bit of shredded cheese and it is really delicious.
I cooked up some chicken breast two different ways. Some I’ve made with hot sauce which I also eat in a tortilla with a bit of shredded cheese and the other chicken I cooked up with some Aminos. That way it’s ready for me to whip up a quick stirfry with vegetables I have on hand. Of course, I hard-boiled some eggs because those are a quick go to protein and my daughter also likes eggs salad for lunch these days. We had potatoes left so I decided to make some home fries with onion, salt & pepper, and paprika. I had some hot Italian turkey sausage that I cooked and I will eat that with fresh pasta and grandma’s tomato sauce I have left from last week. That tomato sauce is also in the Fixxate cookbook and it is amazing! I made a vegetable egg bake instead of egg muffin cups this week. We will see how that goes. It came out kind of flat! 🙂
Food items I have on hand for the week are celery & carrots and hummus to eat with those. I have some avocados, a spaghetti squash, a butternut squash, frozen vegetables, a variety of fruits and tomatoes.
I already started a list for some ingredients I consumed during the meal prep or noticed were running low. But I can head into the week confident – with the odds in my favor for success!
