Meal prepping for myself is rewarding. I enjoy the act of creating foods that are delicious AND good for my health!
My husband is joining me for this round of the 2 1 Day Fix Extreme, which means extra meal prepping for sure. It’s a whole other person, plus he gets to eat more because of his stats.
The Egg Fried Rice is something he liked during his first round, so I decided to make it again! It’s easy to make and substantial to eat.
- Cook brown rice according to directions.
- Sauté veggies in tbsp of olive oil.
- Cook egg(s) on side of vegetables.
- Mix!
- Sprinkle some Aminos and enjoy!
